In recent years, a number of modernist chefs have started to pay more attention the potential role food or drink-extrinsic scents in enhancing their guest’s multisensory gastronomic experiences. This narrative review highlights wide range uses for such ambient, and/or food-extrinsic, aromas. Oftentimes, setting, ambient been introduced by order help set context particular dish, assist with storytelling that surrounds specific element within an experiential meal. Ambient also induce mood trigger nostalgia minds diners. Food-extrinsic have, on occasion, even used deliberately modify taste/flavour drink itself. At same time, however, sensory marketers become increasingly interested idea signature associated branded establishments and they may play inducing desire consume, thus bias (or nudge) people’s purchasing behaviour.
